I don't understand the "Leaf" system

Hello everyone. Before everything, I would like to apologize for my English : I'm from Quebec/Canada so my primary language is French.
So I have read all that I could about LEAVES in hammer and I still don't understand how it works. I know that we don't want the program to Draw which is not in the player's line of sight to avoid unnecessary FPS problems but I don't know how to decide what WON'T be drawn…
My question is : How does it works lol… I've been passing over a hundred hours on my map and it's my first so I'd like it to work well. Thank you guys !!! :D
